  3. 3 tablespoon corn flour

  8. 1 cup white chana
  9. 1 1/2 cup water
  10. to taste Salt
  11. 1 teaspoon turmeric powder
  12. 1 teaspoon red chilli powder
  13. 1 teaspoon cumin powder
  14. Sweet chutney
  15. 1/2 cup tamarind
  16. 3/4 cup jaggery
  17. 1 tablespoon grated ginger
  18. to taste Salt
  19. 1 teaspoon red chilli powder
  20. 1 teaspoon cumin powder
  21. 1 teaspoon dry ginger powder
  22. 1 1/2 cup water
  23. Green chutney
  24. 1 cup Coriander leaves
  25. 1/2 cup mint leaves
  26. 5 green chillies
  27. 1 tablespoon grated ginger
  28. 1 teaspoon cumin seeds
  29. 1 teaspoon sugar
  30. to taste Salt
  31. 1 tablespoon lemon juice
  32. Assembling
  33. 20-25 flat puris
  34. 1 cup sev
  35. 1 Chopped onion
  36. 1 Chopped tomato
  37. 2 tsp chopped coriander leaves
  38. 2 tablespoon Cumin powder
  39. to taste Salt
  40. 2 tablespoon Red chilli powder
  41. 2 tablespoon chat masala

Steps to make to make Ragda Pattice

  1. Soak white chana overnight or for 7-8 hours
  2. Pressure cook chana with salt and turmeric powder for 3 whistles and simmer for 5 mins.
  3. Open the cooker once the pressure is released
  4. Boil potatoes, remove skin and mash
  5. In a bowl put mashed potatoes and all the ingredients under pattice section except oil and mix nicely
  6. Make a nice smooth potato mixture, take small portions and give it pattice shape
  7. In a non-stick pan add 2 tablespoon oil, once the oil is hot shallow fry pattice till golden brown on both the sides, remove and keep aside
  8. Remove Ragda in a bowl and add cumin powder and red chilli powder. Keep aside
  9. For sweet chutney soak tamarind and jaggery for min 2 hours.
  10. In a pan heat the tamarind and jaggery mixture add grated ginger and let it cook for 8- 10 minutes.
  11. Once done, strain the tamarind and jaggery mixture in a bowl, add salt, red chilli powder, dry ginger powder, cumin powder and mix nicely.
  12. This chutney can be stored for a month in fridge.
  13. For green chutney add all the ingredients except lemon juice and blend nicely, remove in a bowl and add lemon juice to retain green colour.
  14. To assemble take pattice mash slightly, add ragda, some onion, tomato, sprinkle salt, red chilli powder, cumin powder, chat masala, crush 4-5 puris
  15. Add green chutney, sweet chutney, garnish with coriander leaves
  16. Lastly add sev and serve.
